An Ode to Broccoli Stems

I owe amends to broccoli stems
For ignorant neglect,
And failure to treat this cabbage with the requisite respect.
On the wrong side of my reckoning
Of wheat versus the chaff
I tossed them in the compost in a culinary gaffe.
Turned up my nose at snout to tail
Of leafy greens and scallion,
You’d think I would know better as an hono’ry Italian.
The stalks so sweet and tender,
Subtle flavors underneath,
And unlike the florets they’re rarely caught betwixt my teeth.
I’ll go out on a limb now
At the risk of a kerfuffle,
And say they’re second only to the venerated truffle!
